The Caimito (as known in Nicaragua), a sweet and delicious fruit is also known as the Star Apple. It is part of the Sapotaceae family, native to the lowlands of Central America and the West Indies.
It is round with a purple skin, and is often green around the calyx. The name Star Apple cones from the star pattern in its pulp. Sometimes, a greenish-white variety of the fruit is found. The purple Caimito has a more dense skin and texture while the greenish brown fruit has a thin skin and a more liquid pulp. The skin itself is not edible. The flattened seeds are light brown and hard. The Caimito tree bears fruit year around after it reaches about seven years of age.
